Higher Certificate in Culinary Arts 

The Higher Certificate in Culinary Arts is an ideal course for those who wish to progress their culinary knowledge with the practical knowledge of how to run a modern-day culinary enterprise. The scope of the programme covers customer service, operations, and management of hotel, restaurant, food production, and food retail enterprises in a modern dynamic business environment. 

The aim of this programme is to provide learners with the knowledge, skills, and competencies necessary for a career in a professional cookery environment. This one-year part-time programme combines college-based education in culinary operations with work-based learning in industry. The primary focus of the course is to prepare graduates for a variety of roles in food preparation in food retail outlets. 

 

 

Based in our Killybegs campus, learners will be able to take advantage of the state of-the-art facilities, which include dedicated training kitchens, a stylish restaurant, modern classrooms, and IT labs. Learners will be taught essential practical skills underpinned with the academic knowledge required of a modern-day professional chef.  

Our culinary lecturers will help you train your senses, guiding you through an incredible range of tastes and flavours from herbs and condiments to vegetables and meats. Your progression will continue through the development of culinary techniques such as knife skills, cooking processes, pastry and baking, larder, and restaurant service. Most of the culinary experience will be on classical French cuisine, however you will get to prepare food from around the world, including Spanish, Greek, Chinese, American, and Italian cuisine. Your practical classes will be backed up with theory, for example, food safety and hygiene, menu planning and nutrition. 

This level 6 course is delivered part time over one academic year with two days per week on campus.  

 

With Springboard funding available for this course, there is a possibility that you could get this course for free if you meet the below requirements! 

Springboard+ applicants must meet all residency and nationality/visa requirements, including the applicant has been ordinarily resident in an EU/EEA/Swiss state for at least three of the five years preceding their entry to the programme.  

Returners – Those who have a previous history of employment but may require upskilling, reskilling, or cross-skilling to transition back to the workforce.  

People in employment – A 10% course fee contribution for Level 7, 8, and 9 courses is applicable for employed participants. This is payable directly to the provider.  

The unemployed or formerly self-employed – May apply to all courses except for the two-year part-time ICT conversion courses. Unemployed applicants will also be required to meet additional criteria.
