Cookery Students Host Successful Lunch for Hospice

Tourism Lunch for HospiceCookery students at the LYIT School of Tourism hosted a delicious lunch on 11 and 12 May 2010 last to raise funds for the Killybegs Hospice.  As part of their studies on the Total Immersion Cookery course (TICP), two groups of students are required to run a restaurant in a ‘real’ setting and this year it was decided to use the event to raise money for the Killybegs Hospice.  Speaking about the event one of the students, Jim Farren explains, “It was a great opportunity for us to learn, and at the same time raise much needed funds for a very important cause here in Killybegs.”

The TICP is nine months intensive Chef’s programme which the students have been taking part in for the past number of months.  “We marketed the lunch and put a lot of thought and effort into the preparation, cooking and service of the meal.  It’s been very enjoyable and a good way to learn.  It was a valuable opportunity to gain important knowledge of what is involved in opening our own restaurant,” adds Jim Farren.

Each class of fourteen students were separated into two teams of seven for the lunch fundraiser.  The teams planned, prepared and opened the restaurant to a busy lunch time crowd.  They had to think about their restaurant concept, things like; menu design, costing, implementation, and preparation of meal. In fact, everything any restaurant owner would need to do to open a new venture.  Students took responsibility for the successful running of the entire event under the guidance of their tutors.

Ann Hanlon who is a member of the second group was pleased with how it went, “We’re delighted that so many people attended the lunch and each one represented much needed money for the Hospice. We’re thrilled that national celebrity, Noel Cunningham, could come too.”

Deirdre McCole, Head of Gastronomy & Culinary Arts at the School of Tourism, congratulated the students, “We’re immensely proud of the marvellous lunches which the students served and of their idea to use the occasion in aid of the Killybegs Hospice.  I’d like to congratulate everyone on such a successful day.”
